At this oystravaganza, Legal Culinary Director Dave Welch will teach you how to shuck 'em and lead a discussion on regional oysters. Compare varieties, from Prince Edward Island's briny specimens to Washington state's clean, cucumbery Kumamoto. Add dollops of Legal's famous mignonette and cocktail sauces to punch up slurps. Georges Perrier is setting up his lauded French fare with regional wines for this swank dinner event. Fried frog legs with garlic coulis will be paired with a light, fragrant Macon-Chaintre to start. Crêpe stuffed with short-rib confit will be served with the bright, juicy Hautes Cotes de Beaune Blanc. Dog and dessert fans are uniting to benefit N.J. Aid for Animals, an organization dedicated to helping pups in need. Sazon's Robert Campbell is preparing more than just his famed pure cacao beverages — ganache-filled truffles, triple chocolate brownies and gluten- and lactose-free sweets will be ready for everyone (except Fido, of course) to sample.
